
Avocado ice cream
Preparation
For 1 portion
- Purée the avocado, mint, lime juice and oil.
- Whip the coconut milk with the bourbon vanilla and the icing sugar using a mixer for 2 minutes; fold in the avocado mixture and pour into an ice cream machine or put in the freezer for 4 hours and stir every 30 minutes with a fork until creamy.
