Avocado ice cream

Ingredients
  • Avocado, stoned 100 g
  • Coconut milk, Rapunzel 150 g
  • Lime juice 5 g
  • Stevia-erythritol icing sugar 5 g
  • Kanso Oil MCT 100 % 20 g
  • Mint, chopped 3 leaves
  • Bourbon Vanilla 1 pinch
Preparation
For 1 portion
  • Purée the avocado, mint, lime juice and oil.
  • Whip the coconut milk with the bourbon vanilla and the icing sugar using a mixer for 2 minutes; fold in the avocado mixture and pour into an ice cream machine or put in the freezer for 4 hours and stir every 30 minutes with a fork until creamy.
