Zucchini fritters

Ingredients
  • Zucchini 100 g
  • Gluten 20 g
  • Almond flour, fine 15 g
  • Vegan cream, Dr. Oetker 40 g
  • Kanso MCT Margarine 83% 20 g
  • Cocktail tomatoes 30 g
  • Salt, black pepper, freshly ground
Preparation
For 3 fritters
  • Grate the zucchini. Wash and half the cocktail tomatoes. 
  • Mix the gluten and the almond flour in a bowl, add the grated zucchini, vegan cream and spices and stir well (best done with a disposable glove on each hand).
  • Heat up the margarine in a pan at medium heat. 
  • Form 3 fritters from the batter and fry these at medium heat for 5 minutes on each side. 
  • Serve with the cocktail tomatoes.
